Ingredients:

● 3 tbsp oil for frying
● 1 large onion
● 1 tbsp Ginger garlic Paste
● 1 fresh green chili
● 1 tbsp curry powder
● 1 tbsp garam masala powder
● 1 tsp cumin
● 1 tsp turmeric
● 1 tsp hot paprika
● 1 kg chicken
● 3 potatoes
● Water
● Salt to taste

Method for Indian Curry:

1. Heat oil in a deep pot.
2. Cut up the onion roughly and add to the oil. When the onion is glassy add the sliced garlic and chili. Wear plastic bags on your hands when you do this to avoid the after burn!
3. Immediately add all the spices and stir.
4. Add the chicken to the curry pot and stir it around until the chicken has been covered with the spices and browned a little.
5. Watch to see that the curry does not stick to the bottom of the pot, and stir occasionally.
6. Now, peel and cut the potatoes into quarters and add them to the curry.
7. Add about a cup of water to the curry and leave to simmer. The water is just to make sure the curry doesn't burn or stick to the bottom, and it allows you the freedom to leave the kitchen and just come back every 20 minutes or so to check that the curry is O.K. and to add more water to the curry if necessary.
8. Cook the curry for as long as you can, although it will be ready in about half an hour,but the longer it cooks, the more tender the meat will be. Yummy! Serve with plenty of water to drink! No need to get complicated with this dish, it will be delicious and enjoyed by all, even in sandwiches the following day! You could add raisins, grated fresh ginger, coconut milk and small pieces of apple to the curry.
